Sortables

Is there any reason why the /sortables endpoints don't get registered when using the Sort extension? https://github.com/stac-api-extensions/sort?tab=readme-ov-file#sortables

I've noticed that the filter extension does register /queryables endpoints 🤔

I think the main reason is that it didn't exist in the spec until stac-api-extensions/sort#12 most of the code here predate this PR but I feel it will be a nice addition.
